Cheese Chicken Enchiladas

Ingredients

  • 1 medium onion, chopped
  • 2 Tbsp. margarine
  • 1 1/2 c. shredded, cooked chicken or turkey
  • 1 (12 oz.) jar picante sauce
  • 1 pkg. (3 oz.) cream cheese, cubed
  • 1 tsp. ground cumin
  • 8 oz. shredded extra sharp Cheddar cheese
  • 8 flour tortillas

Directions

    Heat oven to 350°.

    Cook onion in margarine in large skillet until tender.

    Stir in chicken, 1/4 cup picante sauce, cream cheese and cumin.

    Stir in one cup cheese until heated.

    Place mixture into flour tortillas, roll and fold ends.

    Place into baking dish, top with remaining cheese and salsa.

    Bake 15 to 20 minutes or until cheese melts.
