- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 1 small onion, chopped
- 1/2 c. water
- 2 Tbsp. margarine
- 1/4 c. flour
- 4 c. milk
- 1 1/2 c. cheese, cut up
Directions

1Bring water to a boil; add chopped vegetables.

2Cover and cook until tender.

3Do not drain.

4In separate saucepan, melt margarine over low heat; add flour and stir into a smooth paste.

5Slowly stir in milk.

6Cook and stir until thick.

7Add cheese and cooked vegetables.

8Cook over low heat until cheese melts.

9Serve hot. Serves 6.
