Ingredients
- 4 c. corn flakes cereal or 1 c. corn flake crumbs
- 1 c. unsifted all-purpose flour
- 2 Tbsp. sugar
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. shredded Cheddar cheese
- 1 egg
- 1 c. milk
- 1/4 c. regular oleo or butter, melted
Directions

1If using corn flakes, crush to yield 1 cup crumbs.

2In large bowl, combine crumbs, flour, sugar, baking powder, salt and shredded cheese; mix well.

3Beat egg with milk and melted oleo. Add all at once to flour mixture and stir only until moistened. Spoon into 9 greased 2 1/2 x 1 1/2-inch muffin cups.

4Bake in 400° oven for 25 minutes or until done.

5Makes 9 muffins.
