  • 4 oz sharp cheddar cheese, shredded
  • 4 oz blue cheese, crumbled
  • 3 oz cream cheese, softened
  • 2 tablespoons or more port or brandy
  • 1/2 cup finely chopped walnuts
  • red pepper, optional

Directions

    Beat together cheeses. Gradually add brandy/port to taste, to make creamy spread. Add walnuts, pepper. Pack in a crock or ramekins. Cover tightly, chill. Best after 3 to 5 days. Let stand at room temp 30 minutes before serving.
