- 2 eggs
- 1 Tbsp. lemon juice
- 1 tsp. vanilla extract
- vanilla wafers
- fruit topping of choice
Directions

1Combine all ingredients except vanilla wafers and topping. Place a vanilla wafer at the bottom of muffin/cupcake liner.

2Fill each cup 1/2 to 3/4 full.

3Bake at 375° for 15 minutes.

4Allow to cool completely.
