  • 16 oz. cream cheese
  • 3 c. sugar
  • 2 eggs
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla extract
  • vanilla wafers
  • fruit topping of choice

Directions

    Combine all ingredients except vanilla wafers and topping. Place a vanilla wafer at the bottom of muffin/cupcake liner.

    Fill each cup 1/2 to 3/4 full.

    Bake at 375° for 15 minutes.

    Allow to cool completely.

    Top with favorite fruit topping.
