Cheese Custard Pie(Switzerland)

  • 1 (8-inch) baked pie crust (at least 2 inches deep)
  • 1 3/4 c. milk or cream
  • 1 c. grated cheese
  • 1/2 tsp. salt
  • 1/4 tsp. paprika
  • 1/2 tsp. grated onion
  • few grains cayenne

Directions

    When pie crust is cool, brush with egg white.

    Scald milk or cream.

    Reduce heat and add grated cheese.

    Stir until cheese is melted, then add salt, paprika, onion and cayenne pepper.

    Remove mixture from heat and beat in 3 eggs, one at a time.

    Fill pie crust and bake at 325° in a preheated oven until firm (about 45 minutes).
