- 1 (8-inch) baked pie crust (at least 2 inches deep)
- 1 3/4 c. milk or cream
- 1 c. grated cheese
- 1/2 tsp. salt
- 1/4 tsp. paprika
- 1/2 tsp. grated onion
- few grains cayenne
Directions

1When pie crust is cool, brush with egg white.

2Scald milk or cream.

3Reduce heat and add grated cheese.

4Stir until cheese is melted, then add salt, paprika, onion and cayenne pepper.

5Remove mixture from heat and beat in 3 eggs, one at a time.

6Fill pie crust and bake at 325° in a preheated oven until firm (about 45 minutes).
