Cheese Enchiladas

  • 12 tortillas (corn or flour)
  • 3 Tbsp. oil
  • 2 medium onions, chopped
  • 1/2 lb. grated Longhorn cheese
  • 2 (10 oz.) cans enchilada sauce
  • 1 (4 1/2 oz.) can green chilies

Directions

    Dip tortillas, one at a time, in hot oil to soften and drain on paper towel.

    Sprinkle onion, cheese and peppers on tortillas and roll up.

    Place, lapped side down, in shallow baking dish and cover with the enchilada sauce.

    Top with grated cheese and bake at 350° until cheese is melted.
