- 12 tortillas (corn or flour)
- 3 Tbsp. oil
- 2 medium onions, chopped
- 1/2 lb. grated Longhorn cheese
- 2 (10 oz.) cans enchilada sauce
- 1 (4 1/2 oz.) can green chilies
Directions

1Dip tortillas, one at a time, in hot oil to soften and drain on paper towel.

2Sprinkle onion, cheese and peppers on tortillas and roll up.

3Place, lapped side down, in shallow baking dish and cover with the enchilada sauce.

4Top with grated cheese and bake at 350° until cheese is melted.
