Cheese Grits Casserole

Ingredients

  • 1 tsp. salt
  • 4 1/2 c. water
  • 1 c. quick grits
  • 1/2 c. plus 2 Tbsp. oleo
  • 1/2 c. grated sharp Cheddar cheese
  • 1/2 tsp. garlic salt
  • dash of Tabasco sauce
  • 2 eggs
  • 2/3 c. milk

Directions

    Add salt, garlic salt and Tabasco sauce to the water.

    Bring to rapid boil.

    Slowly add the grits and boil 3 to 5 minutes.

    Remove from heat.

    Add 1/2 cup oleo and cheese.

    Stir until oleo melts. Beat eggs.

    Stir in milk.

    Add grits mixture.

    Pour into greased 2 1/2-quart casserole.

    Dot top with 2 tablespoons oleo.

    Bake in preheated oven at 350° for 1 hour.
