Cheese 'N Spinach Casserole

  • 1 (12 oz.) pkg. wide egg noodles (uncooked)
  • 2 c. cottage or Ricotta cheese
  • 2 c. shredded Cheddar (8 oz.)
  • 1 1/4 c. frozen chopped spinach, thawed and well drained (10 oz. pkg.)
  • 3 eggs
  • 3 1/2 c. spaghetti sauce (32 oz.)

Directions

    Cook noodles according to directions for 3 minutes.

    Drain. Meanwhile, in large bowl, combine cheeses, spinach and eggs. Combine cooked noodles with 2 1/2 cups sauce; place half in a 3-quart casserole.

    Top noodle mixture with cheese mixture, then remaining noodles and sauce.

    Sprinkle with Parmesan cheese, if desired.

    Cover and bake at 350° for 30 to 35 minutes or until hot and bubbly.
