  • 4 to 5 eggs
  • 1/3 c. milk
  • 4 slices any cheese of your choice, cut into 3 pieces

Directions

    Put into a mixing bowl the eggs and milk.

    Whip the tar out of the mixture until light and fluffy.

    While beating the egg/milk mixture, preheat an omelet pan (folding, hinged pan is best; they are available at Bealls for around $9.99+) until it just sizzles when you sprinkle drops of cold water into pan.

    Pour half of the egg mixture into each side of the pan.

    Tilt both sides of pan so mixture starts to cook.

    When firm, place six pieces of cheese on each side of the pan.

    Fold over and cook for a short time, rotating pan until done.
