- 5 to 6 medium potatoes
- 2 c. shredded Cheddar cheese
- 1/4 c. butter
- 1 1/2 c. sour cream
- 1/3 c. chopped green onions
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. butter
Directions

1Boil the potatoes in the skins.

2Cool, peel and then shred coarsely.

3Mix in a saucepan over low heat the cheese and 1/4 cup butter, stirring until almost melted.

4Remove from heat; blend in sour cream, onions, salt and pepper.

5Fold in the potatoes.

6Pour into a greased 2-quart casserole dish.

7Dot the top with the leftover butter, then bake, uncovered, at 325° to 350° for 30 minutes.
