  • 5 to 6 medium potatoes
  • 2 c. shredded Cheddar cheese
  • 1/4 c. butter
  • 1 1/2 c. sour cream
  • 1/3 c. chopped green onions
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. butter

Directions

    Boil the potatoes in the skins.

    Cool, peel and then shred coarsely.

    Mix in a saucepan over low heat the cheese and 1/4 cup butter, stirring until almost melted.

    Remove from heat; blend in sour cream, onions, salt and pepper.

    Fold in the potatoes.

    Pour into a greased 2-quart casserole dish.

    Dot the top with the leftover butter, then bake, uncovered, at 325° to 350° for 30 minutes.
