Ingredients
- 12 carrots, pared and cut into 2-inch lengths, then quarters
- 1/2 c. butter
- 1/4 c. flour
- 1 tsp. salt
- 1 tsp. dry mustard
- 1 large onion
- 2 c. milk
- 1/8 tsp. pepper
- 1/4 tsp. celery salt
- 1/2 lb. Velveeta cheese, sliced
- 2 c. fresh buttered bread crumbs
Directions

1Cook carrots, then drain.

2Saute sliced onion in butter.

3Stir in flour, salt, mustard, then milk.

4Cook, stirring until smooth. Add pepper and celery salt.

5In a 2-quart casserole dish, layer carrots and cheese, then repeat.

6Pour sauce over all.

7Top with bread crumbs.

8Bake in a 350° oven for 25 minutes or until golden brown.

9Serves 6 to 8.
