  • 12 carrots, pared and cut into 2-inch lengths, then quarters
  • 1/2 c. butter
  • 1/4 c. flour
  • 1 tsp. salt
  • 1 tsp. dry mustard
  • 1 large onion
  • 2 c. milk
  • 1/8 tsp. pepper
  • 1/4 tsp. celery salt
  • 1/2 lb. Velveeta cheese, sliced
  • 2 c. fresh buttered bread crumbs

    Cook carrots, then drain.

    Saute sliced onion in butter.

    Stir in flour, salt, mustard, then milk.

    Cook, stirring until smooth. Add pepper and celery salt.

    In a 2-quart casserole dish, layer carrots and cheese, then repeat.

    Pour sauce over all.
