- 1 c. milk
- 3 Tbsp. all-purpose flour
- 1 Tbsp. butter or margarine
- 4 large eggs
- 1 Tbsp. cornstarch
- 1 1/4 c. shredded cheese
- dash of salt
- dash of freshly ground pepper
Directions

1In a heavy saucepan, combine milk and flour.

2Bring to a boil, stirring.

3Cook 3 to 4 minutes.

4Add butter.

5Beat until melted. Remove pan from heat.

6Separate eggs.

7Add egg yolks, one at a time, and beat until incorporated.

8Add cornstarch, shredded cheese and seasonings.

9Beat egg whites until stiff peaks form.

10Carefully fold into cheese mixture.

11Lightly grease a souffle dish (or use individual serving dishes).

12Carefully pour mixture into dish. Bake at 350° for about 40 minutes for large souffle, 25 minutes for individual souffle.

13Do not open oven door during baking time. Serve immediately.

14One hour total, 40 minutes baking time.
