Cheese Souffle

Ingredients

  • 5 slices white bread
  • 1/2 lb. cheese
  • 3 eggs
  • 2 c. milk
  • 1 tsp. dry mustard (I use what I have)
  • 1/2 tsp. salt
  • dash of cayenne

Directions

    Cut crust from bread; butter.

    Cut slices into 12 or 16 cubes. Line bottom of greased casserole dish with the bread.

    Sprinkle with cheese, alternating bread and cheese until all is used, ending with layer of cheese on top.

    Beat eggs and combine with milk and seasoning.

    Pour over bread and cheese.

    Let stand 3 hours, but preferably overnight.

    Cook next morning, uncovered, for breakfast. Cook for 45 minutes at 350°.
