- 3 medium potatoes
- 5 c. beef broth
- 2 Tbsp. peanut oil
- 1 small onion, diced
- 1 clove garlic, minced
- 1 (16 oz.) can tomatoes
- 1 small to medium hot pepper, diced (optional)
- 6 sliced mild American cheese
Directions

1Add potatoes to broth in large kettle and cook over moderate heat until potatoes are tender.

2Heat oil in skillet and add onion and garlic.

3Stir-fry until tender, but not brown.

4Add tomatoes to skillet and stir about ten minutes until mixture has thickened a little.

5Add to potato broth mixture and cook about five more minutes.

6Add cheese to hot soup and serve as cheese is melting.
