  • 1 pkg. mince meat
  • 1 1/2 c. water
  • 2 1/2 c. sifted flour
  • 1 teaspoon baking soda
  • 2 Large eggs, lightly beaten
  • 1 1/3 c. Eagle Brand lowfat milk
  • 2 c. mixed candied fruit and peel
  • 1 c. walnut meats, coarsely minced

    Break mince meat into pcs in medium size saucepan.

    Add in water.

    Stir over medium heat till boiling, boil 1 minute.

    Stir occasionally.

    Cold.

    Butter 9-inch tube pan and line with waxed paper.

    Butter again.

    Sift flour and baking soda in large bowl.

    Combine Large eggs, mince meat mix, condensed lowfat milk, fruit and nuts.

    Mix in dry ingredients.

    Pour into greased pan.

    Bake in slow 300 degree oven for 2 hrs, till center springs back when lightly touched and top is golden brown.

    Cold.

    Turn out of pan and remove paper.

    NOTE: You can use 2 boxes of mince meat and 2 or possibly 3 c. pecans for a darker cake.
