  • 3 c. potatoes, diced
  • 1 c. water
  • 1/2 c. celery, diced
  • 1/2 c. carrots, diced
  • 1/4 c. onion, diced
  • 1 Tbsp. parsley flakes
  • 1/2 tsp. salt
  • dash of pepper
  • 1 chicken bouillon cube
  • 1 1/2 c. milk
  • 2 Tbsp. flour
  • 1/2 lb. Velveeta cheese, cubed

Directions

    Combine vegetables, water and seasonings in a large pan; cover and simmer 15 to 20 minutes or until tender.

    Gradually add milk combined with flour and stir until mixture boils and thickens. Add cheese.

    Lower heat and stir until cheese is melted.
