- 1/4 c. finely chopped onion
- 1/4 c. finely chopped carrots
- 1/4 c. finely chopped celery
- 2 Tbsp. butter
- 1/3 c. flour
- 2 c. chicken broth
- 2 c. milk or half and half
- 1 lb. shredded Cheddar cheese
Directions

1In a large saucepan, cook veggies in butter until tender but not brown.

2Stir flour into broth until smooth.

3Add broth and cream to vegetables.

4Cook and stir until thickened.

5Add cheese. Season with salt and pepper.

6Cook just until cheese is melted. Serves 4.
