  • 1 Tbsp. butter
  • 1 Tbsp. finely chopped onion
  • 1 Tbsp. flour
  • 1 c. well seasoned beef stock
  • 2 c. milk
  • 3/4 c. grated cheese (Cheddar)
  • 2 tsp. paprika

Directions

    Melt the butter in a pot.

    Add the onion and cook slowly until limp.

    Stir in the flour and continue to cook for 3 minutes, stirring.

    Slowly add the seasoned stock and milk and heat to the boiling point, stirring frequently.

    Stir in the cheese and paprika and whisk until the cheese has melted and the soup is very hot.
