Ingredients

  • 1/2 green pepper
  • 1 small onion
  • 1 stick butter
  • 4 or 5 medium potatoes
  • 1 can chicken broth
  • 1 (1 lb.) pkg. Velveeta cheese
  • milk

Directions

    Dice green pepper and onion.

    Put in a soup kettle with the butter.

    Saute until soft.

    Peel and chop potatoes into small bite size pieces.

    Add to the pepper and onion mixture.

    Pour in one can of chicken broth and enough water to just cover the potatoes.

    Cook until the potatoes are completely done.

    After potatoes are cooked, cut up the cheese and stir in the potatoes.

    After cheese is melted, stir in milk until desired thickness.
