- 1/2 green pepper
- 1 small onion
- 1 stick butter
- 4 or 5 medium potatoes
- 1 can chicken broth
- 1 (1 lb.) pkg. Velveeta cheese
- milk
Directions

1Dice green pepper and onion.

2Put in a soup kettle with the butter.

3Saute until soft.

4Peel and chop potatoes into small bite size pieces.

5Add to the pepper and onion mixture.

6Pour in one can of chicken broth and enough water to just cover the potatoes.

7Cook until the potatoes are completely done.

8After potatoes are cooked, cut up the cheese and stir in the potatoes.

9After cheese is melted, stir in milk until desired thickness.
