- 1/2 lb. black-eyed peas
- 2 tsp. salt
- 1 c. rice
- 1/4 tsp. baking soda
- 1/4 lb. cut up meat (bacon, side meat, jowl, etc.)
Directions

1Soak peas overnight, drain, rinse and put in kettle.

2Cover with boiling water.

3Add the soda and bring to a boil.

4Drain and rinse again.

5Now, put in fresh water and boil, allowing a quart and a half water; add the salt and meat.

6Cook just at boiling point for 4 hours.

7Now, add the rice and boil 45 minutes longer.
