Cheese Soup

Ingredients

  • 4 c. water
  • 1 c. diced celery
  • 1 c. diced carrots
  • 2 1/2 c. cubed potatoes
  • 1 c. diced onion
  • 4 bouillon cubes (beef or chicken)
  • 10 oz. pack frozen mixed vegetables
  • 2 cans cream of chicken soup
  • 1 lb. Velveeta diced

Directions

    Simmer celery, onions, bouillon cubes for 20 minutes in boiling water.

    Add carrots, mixed vegetables, potatoes and simmer 40 minutes.

    Add soup and cheese and blend well.

    (At the beginning, I use more water, so it isn't too thick).

    (My husband can even make this soup, so it can't be too difficult!)
