- 3/4 stick margarine
- 1 c. finely chopped carrots
- 1 c. finely chopped celery
- 1 c. finely chopped onion
- 1/4 c. flour
- 1 1/2 Tbsp. cornstarch
- 2 cans chicken broth
- 1 qt. milk
- 1 lb. American cheese (either grated or cut into small pieces)
Directions

1Saute vegetables in butter over medium heat until tender (about 10 minutes).

2Add flour and cornstarch and stir until blended.

3Slowly add broth and milk, then cheese.

4Cook over slow heat until cheese is melted.

5Add salt and pepper to taste.
