- 2 cans chicken broth
- 1/2 c. water
- 1/2 c. diced onion
- 1/2 c. diced celery (optional)
- 2 1/2 c. peeled and cubed potatoes
- 1 bag frozen vegetables (carrots, broccoli and cauliflower)
- 2 cans cream of chicken soup
- 1 lb. Velveeta cheese
Directions

1Combine chicken broth, water, onion and celery in a pan, cover and cook 20 minutes on medium heat.

2Add potatoes and frozen vegetables.

3Cook, covered, 30 minutes until tender.

4Add cream of chicken soup and Velveeta cheese.

5Heat on low until cheese melts, stirring frequently.
