- 34 lb sliced American cheese
- 14 teaspoon salt
- 34 cup whole milk
- 18 teaspoon dry mustard
- 1 dash cayenne pepper
- 2 egg yolks, room temperature
Directions

1Dice up american cheese ande put in medium sized heavy saucepan.

2Add the salt, milk, dry mustard, and cayenne pepper.

3Cook over low heat stirring constantly.

4Remove from heat when cheese is melted.

5Quickly stir in egg yolks until well blended.

6Return to heat for about 1 minute or until mixture is completely smooth.

7Pour into a container and leave uncovered until cool.

8Cover and put in refrigerator.

9Makes about 2 cups.
