- 3 1/2 c. flour
- 3/4 tsp. cayenne pepper
- 1/4 tsp. salt
- 3/4 lb. butter
- 1 lb. sharp cheese, shredded
Directions

1Sift flour, add salt and butter in large bowl.

2Cut butter in and blend into dry ingredients until you get crumbs.

3Add cheese and continue blending until it hangs together and no longer crumbles.

4Work 1/4 at a time and roll out in a rectangle 1/3-inch thick and cut into strips (or you can use a pastry press).

5Put on baking sheet and bake at 375° for 10 to 12 minutes, only until lightly browned.

6Cool and store in airtight tins placing wax paper between layers.

7Yields about 125 strips.
