Cheese Vegetable Broil

  • 1/2 head cauliflower
  • 2 medium carrots
  • 2 Tbsp. olive oil
  • 1/2 c. shredded Cheddar cheese
  • basil
  • salt and pepper

    Break apart cauliflower into small pieces.

    Wash under cold water.
  3. 3
    Skin, wash and slice carrots into 1/4-inch discs.

    Place vegetables in a steamer with cauliflower on the bottom.

    Steam until tender, but still have a crunch.

    Place in an ovenproof dish. Drizzle with olive oil.

    Sprinkle with basil and toss.

    Top with Cheddar cheese and place under the broiler until cheese melts. Salt and pepper to taste.
