Ingredients: 2 envelopes unflavored gelatin; 1/4 c. sugar, divided; 1/4 tsp. salt; 2 packets Butter Buds mix, divided; 1/2 c. unsweetened pineapple juice; 3 Tbsp. unsweetened pineapple juice; 1 c. 2% low-fat milk; 2 eggs, separated; 8 oz. dry curd cottage cheese; 1/2 c. canned crushed pineapple (in juice), drained; 1 Tbsp. grated fresh lemon peel; 1/2 c. graham cracker crumbs; 1 tsp. vanilla; 1 Tbsp. lemon juice

1/4 tsp. salt

Directions

Mix gelatin, 3 tablespoons sugar, salt, 1 packet Butter Buds, 1/2 cup pineapple juice, milk and egg yolks in top of double boiler.

Place over boiling water and cook, stirring constantly, until gelatin dissolves and mixture thickens slightly. Cool.
