  • 2 envelopes unflavored gelatin
  • 1/4 c. sugar, divided
  • 1/4 tsp. salt
  • 2 packets Butter Buds mix, divided
  • 1/2 c. unsweetened pineapple juice
  • 3 Tbsp. unsweetened pineapple juice
  • 1 c. 2% low-fat milk
  • 2 eggs, separated
  • 8 oz. dry curd cottage cheese
  • 1/2 c. canned crushed pineapple (in juice), drained
  • 1 Tbsp. grated fresh lemon peel
  • 1/2 c. graham cracker crumbs
  • 1 tsp. vanilla
  • 1 Tbsp. lemon juice

Directions

    Mix gelatin, 3 tablespoons sugar, salt, 1 packet Butter Buds, 1/2 cup pineapple juice, milk and egg yolks in top of double boiler.

    Place over boiling water and cook, stirring constantly, until gelatin dissolves and mixture thickens slightly. Cool.
