- 3/4 c. sugar
- 2 eggs
- 2 tsp. vanilla
- 1/2 tsp. grated lemon peel
- 1/2 c. Bisquick baking mix
- 16 oz. cream cheese, cut into 1-inch cubes and softened
Directions

1Heat oven to 350°.

2Grease 9-inch pie plate.

3Place all ingredients, except topping in blender.

4Blend on high speed, stopping occasionally to stir, until smooth, about 3 minutes. Pour into plate.

5Bake just until puffed and center is dry, about 30 minutes.

6Do not overbake.

7Spread topping carefully over top. Cool.

8Refrigerate until chilled, at least 3 hours.

9Serve with fruit, if desired.
