  • 2 small pkg. lemon Jell-O
  • 1 pkg. graham crackers, crushed
  • 3 Tbsp. sugar
  • 3 Tbsp. oleo, melted
  • 1 (8 oz.) cream cheese
  • 1 can evaporated milk, chilled
  • 1 small can crushed pineapple
  • 1 c. sugar

    Dissolve Jell-O in 1 cup boiling water.

    Cool.

    Mix together cracker crumbs, 3 tablespoons sugar and melted oleo.

    Pat crumb mixture in bottom of 9 x 13-inch baking pan.

    In large mixing bowl combine cream cheese with chilled milk.

    Beat with mixer until fluffy, gradually adding 1 cup sugar.

    Stir in pineapple.

    Pour mixture into crumb crust. Top with a few additional crumbs. Refrigerate until set.
