Ingredients
- 16 oz. Ricotta cheese
- 16 oz. cream cheese
- 16 oz. sour cream
- 1 1/2 c. sugar
- 4 eggs, slightly beaten
- 1 tsp. vanilla
- 2 Tbsp. lemon juice
- 1/3 c. cornstarch
- 1/2 c. melted butter or oleo
Directions

1Heat oven to 325°.

2Grease spring-form pan.

3Crush 1/2 package of graham crackers and dust sides of pan and remaining crumbs leave on bottom.

4Cream cheeses together on medium until mixed well.

5Add remaining ingredients in order given, mixing until smooth and creamy.

6Pour into pan and place in oven.

7Bake for 1 hour and 10 minutes, then when done baking do not open oven!!!

8Shut oven off and leave cheesecake in the oven for 1 to 2 hours.

9Remove and let cool completely.

10Run a knife around side.

11Remove side rim and cover and refrigerate overnight.

12Serve with cherries or strawberries.
