- 100 grams Cream cheese
- 15 grams Butter
- 1 Egg
- 30 grams Sugar
- 30 grams Pancake mix
- 1 tbsp Milk
- 1 tsp Lemon juice (concentrate)
- 1 dash Vegetable oil (to grease the mold)
Directions

1Cut the cream cheese and put into a heat resistant container along with the butter.

2Microwave at 600 W for about 40 seconds to soften.

3Mix with a whisk until it reaches a creamy consistency.

4Add the remaining ingredients and mix well.

5Preheat the oven to 180C.

6Grease a heatproof mold such as mini gateau molds or small cupcake molds.

7Using a spoon, pour the batter into the molds.

8The cheesecakes with rise in the oven, so leave about 2 mm of space at the top of the mold.

9Hold the mold with both hands and drop onto the work top a few times to remove any air bubbles and to flatten the surface.

10When the oven has finished preheating, pop the molds in the oven and bake for about 15 minutes while watching over them.
