- 2 Tbsp. melted margarine
- 2 c. part-skim Ricotta or low-fat cottage cheese
- 2 egg whites
- 1 tsp. vanilla
- 1/4 tsp. almond extract
- 3 Tbsp. light honey
- fresh fruit (such as tangerine or kiwi sections or berries)
Directions

1Lightly oil a 9-inch tart pan.

2In a blender, process cookies and butter until the mixture is crumbly.

3Press mixture onto bottom and sides of a tart pan, then refrigerate.

4Preheat oven to 325°.
