  • 5/8 cup cream cheese
  • 1 3/4 ounces Rulo goat cheese without rind
  • 5 3/8 tablespoons milk
  • 2 3/8 tablespoons sugar
  • 1/8 tablespoon gelatin plain
  • 10 Maria Cookies
  • 1 3/8 tablespoons butter
  • 1 1/16 cups pitted cherries chopped
  • 5 5/8 tablespoons sugar
  • 3 7/8 tablespoons water
  • 1/8 tablespoon gelatin plain

    For the crust, crush cookies and mix well with the melted butter.

    Press mixture in an even layer into each mold and flatten carefully with the back of a spoon.

    Refrigerate until cool.

    For the cheesecake, heat cream cheese, cheese, milk and sugar in a saucepan and bring to a boil.

    When it starts to boil, remove from heat and stir in gelatin until dissolved.

    Let cool.

    Pour mixture into prepared molds.

    Refrigerate until cool.

    For the cherry syrup, place cherries, sugar and water in a saucepan and bring to a boil.

    Cook for about 20 minutes, until syrup thickens, stirring often.
