- 4 or 8 medium green peppers
- 1 lb. bulk pork sausage or hamburger meat
- 1/4 c. chopped onion
- 1 c. whole kernel corn
- 1 can (15 oz.) tomato sauce
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 c. (4 oz.) shredded Cheddar cheese
- 1 1/2 c. soft bread crumbs
- 2 tsp. melted butter
- 4 slices (10 oz.) Cheddar cheese
Directions

1Cut off tops from 8 green peppers or cut 4 in half lengthwise; remove seed and membrane.

2Parboil 5 minutes in boiling salted water; drain.

3Brown meat and onion in skillet; drain off excess fat.

4Add corn, 1 cup tomato sauce, salt and pepper.

5Simmer until heated through, about 5 minutes.

6Remove from heat; add cheese.

7Stir until cheese is melted.

8Add 1 cup bread crumbs.

9Yield:

10approximately 4 1/2 cups.

11Fill peppers with meat-corn mixture.

12Combine 1/2 cup bread crumbs with butter. Top filled peppers with crumbs.

13Pour remaining tomato sauce in bottom of baking pan; arrange peppers.

14Bake in preheated 350° oven, 25 or 30 minutes or until heated through.

15Place half a cheese slice on each pepper.

16Place under broiler until cheese melts.
