Cheesy Cauliflower

  • 1 head Cauliflower, Chopped
  • 2 Tablespoons Butter
  • 2 Tablespoons Flour
  • 1 cup Milk
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Pepper
  • 1/2 teaspoons Garlic Powder
  • 1/4 teaspoons Nutmeg
  • 2 Tablespoons Parmesan
  • 3/4 cups Cheddar Cheese, divided

Directions

    Take the core off the cauliflower and chop into similar sizes. Add to a pot of water and boil for 15 minutes. Remove the cooked cauliflower from the pot and drain. Preheat oven to 350°F.

    To the same pot, add butter and cook over medium heat to melt. Once melted, whisk the flour 1 tablespoon at a time and stir to combine. Add the milk and continue to whisk until it starts thickening. Add salt, pepper, garlic powder, nutmeg, then Parmesan. Whisk to combine. Add 1/2 cup of the cheddar cheese and stir until melted and combined completely.

    Add the cauliflower back into the pot and stir the sauce and cauliflower so that the cauliflower is fully coated. Transfer the cauliflower into a greased oven proof bowl then sprinkle with remaining 1/4 cup cheddar cheese.

    Put into 350°F oven for 15 minutes. Enjoy!
