Cheesy Chile Mashed Potatoes

  • 2 1/2 lb potatoes
  • 1 tsp salt
  • 4 oz shredded cheddar cheese
  • 4 oz diced green chilies
  • 1 cup milk
  • 3 tbsp butter

Directions

    Peel and cut potatoes into 1 inch cubes.

    Add to a pot covering with water at least 1 inch above potatoes.

    Bring to a boil then reduce heat to simmer, cover and cook for 10 minutes or until fork tender.

    Drain and return to pot.

    Stir in milk, butter, & garlic powder.

    Mash until smooth.

    Stir in cheese, chilies, & salt.
