Ingredients
- 1/4 c. margarine
- 1 c. rice
- 1/4 c. chopped onion
- 2 1/2 c. water
- 1 (4 oz.) can mild green chiles, drained
- 1 Tbsp. chicken bouillon
- 1 c. (4 oz.) shredded Monterey cheese
- 1/4 c. sliced ripe olives
- 2 oz. diced pimento, drained
- 2 Tbsp. chopped parsley
Directions

1In a 2-quart saucepan, melt the margarine.

2Add rice and onion.

3Cook over medium heat, stirring, until rice is a golden color, 8 to 10 minutes.

4Slowly add water, green chiles and bouillon.

5Continue cooking until mixture comes to full boil (8 to 10 minutes).

6Reduce heat to low.

7Cover; simmer 25 to 30 minutes. Stir in remaining ingredients.

8Serve immediately.
