Cheesy Corn Chowder

  • vegetable cooking spray
  • 3/4 c. sliced green onions
  • 1/2 c. chopped celery
  • 1/2 c. chopped sweet red pepper
  • 3 1/2 Tbsp. all-purpose flour
  • 4 1/2 c. skim milk, divided
  • 2 c. frozen whole kernel corn, thawed
  • 2 1/2 tsp. chicken flavored bouillon granules
  • 1/8 tsp. ground white pepper
  • 3/4 c. shredded reduced-fat sharp Cheddar cheese (3 oz.)

Directions

    Coat a large saucepan with cooking spray; place over medium heat until hot.

    Add green onions, celery and sweet red pepper; saute until tender.

    Combine flour and 1/2 cup milk; stir until smooth.

    Add flour mixture, remaining 4 cups milk, corn, bouillon granules and ground pepper to vegetable mixture.

    Bring to a boil; reduce heat, and simmer, uncovered, 15 minutes.

    Add cheese; cook, stirring constantly, until cheese melts.
