  • 1 tablespoon oil
  • 20g butter
  • 2 x 310g cans corn kernels, drained
  • 1/2 green capsicum, finely chopped Target 1 pkg For $2.99 thru 02/06
  • 1 stick celery, chopped
  • 1 clove garlic, crushed
  • 1/4 cup flour
  • 1 2/3 cups chicken stock
  • 1 cup milk
  • 2 cups grated KRAFT Tasty Cheese
  • 2 tablespoons sweet chilli sauce
  • 2 tablespoons chopped coriander
  • extra sweet chilli sauce, for drizzling

Directions

    HEAT oil and butter in a large saucepan until butter has melted.

    Add corn, capsicum, celery and garlic and cook for 3-4 minutes.

    ADD flour to pan and cook, stirring, for one minute.

    Add stock and milk and cook, stirring occasionally until soup has boiled and thickened.

    Remove from the heat.

    STIR through the cheese, sweet chilli sauce and coriander.

    Ladle the soup into serving bowls drizzle with sweet chilli sauce.

    Serve immediately.
