- 1 1/2 c. all-purpose flour
- 1/2 c. corn meal
- 3 tsp. baking powder
- 1/4 c. sugar
- 1/4 tsp. salt
- 1 egg
- 1 c. milk
- 1/4 c. vegetable oil
- 1 c. canned whole kernel corn, drained
- 1 c. shredded Cheddar cheese
Directions

1Grease bottoms of 12 muffin cups.

2In a bowl, combine flour, corn meal, sugar, salt and baking powder.

3Blend well.

4Add milk, oil and egg; stir just until dry ingredients are moistened.

5Stir in corn and cheese.

6Spoon batter into prepared muffin cups.

7Bake in preheated 400° oven 20 to 25 minutes or until golden brown. Serve warm.
