  • 1 1/2 c. all-purpose flour
  • 1/2 c. corn meal
  • 3 tsp. baking powder
  • 1/4 c. sugar
  • 1/4 tsp. salt
  • 1 egg
  • 1 c. milk
  • 1/4 c. vegetable oil
  • 1 c. canned whole kernel corn, drained
  • 1 c. shredded Cheddar cheese

Directions

    Grease bottoms of 12 muffin cups.

    In a bowl, combine flour, corn meal, sugar, salt and baking powder.

    Blend well.

    Add milk, oil and egg; stir just until dry ingredients are moistened.

    Stir in corn and cheese.

    Spoon batter into prepared muffin cups.

    Bake in preheated 400° oven 20 to 25 minutes or until golden brown. Serve warm.
