Cheesy Corn Pudding

Ingredients

  • 1 c. whole kernel corn
  • 1 c. canned creamed corn
  • 2 eggs, slightly beaten
  • 1 c. milk (evaporated)
  • 2 Tbsp. sugar
  • 3 Tbsp. diced onion
  • about 1/4 c. flour and cornmeal, mixed
  • 1 Tbsp. each: diced green pepper, red pepper and jalapeno pepper
  • 2 Tbsp. margarine, melted
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. grated Cheddar cheese

    Combine all ingredients and mix well.

    Pour into lightly greased 1 1/2-quart casserole.

    Bake, uncovered, at 350° about 1 hour or until set in center.
