- 12 large eggs
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 14 teaspoon salt
- 2 cups milk (any kind)
- 16 ounces cottage cheese, small curd
- 8 ounces cream cheese, cut into 1/2-inch cubes
- 13-12 lb shredded monterey jack cheese
Directions

1Preheat oven to 350F

2Lightly grease a 9x13-inch baking/casserole dish.

3In a large bowl, or the bowl of a stand mixer, beat together eggs, flour, baking powder, salt and milk.

4Stir in cottage cheese, cream cheese and shredded Monterey jack cheese.

5Pour into prepared baking dish.

6Bake for about 45 minutes, until eggs are set and casserole is not wet in the middle.

7Dish will deflate slightly as it cools.

8Cool for at least 10 minutes before serving to make slicing easier.
