  • 1 bag of medium size flour tortillas (10 in pack)
  • 1 can sliced black olives
  • 2 lbs medium red enchillada sauce
  • 24 oz colby jack and sharp cheddar cheese (shredded)

Directions

    Preheat oven to 350 degrees.

    Spoon small amount of sauce into tortilla, then place about a handful or so of cheese in tortilla. Roll up and lay in pan.

    Repeat until all tortillas are used, generally will require two baking pans depending on size.

    Spoon remaining sauce over and between enchilladas.
  5. 5
    Top with remaining cheese and black olives.

    Bake in oven for 17-25 minutes.
