- 1 bag of medium size flour tortillas (10 in pack)
- 1 can sliced black olives
- 2 lbs medium red enchillada sauce
- 24 oz colby jack and sharp cheddar cheese (shredded)
Directions

1Preheat oven to 350 degrees.

2Spoon small amount of sauce into tortilla, then place about a handful or so of cheese in tortilla. Roll up and lay in pan.

3Repeat until all tortillas are used, generally will require two baking pans depending on size.

4Spoon remaining sauce over and between enchilladas.

5Top with remaining cheese and black olives.

6Bake in oven for 17-25 minutes.
