- 9 medium potatoes
- 2 c. Cheddar cheese
- 1/4 c. butter
- 1 (8 oz.) sour cream
- 1 Tbsp. chopped green onion
- 1/2 tsp. salt
- 1/4 tsp. pepper
- paprika
Directions

1Add water to unpeeled potatoes just to cover.

2Sprinkle with salt.

3Bring to boiling for 30 to 35 minutes.

4Drain.

5Peel and shred potatoes with a grater.

6In a large mixing bowl combine potatoes, cheese and butter; stir until butter is melted.

7Stir in sour cream, green onion, salt and the pepper.

8Transfer to a greased pan.

9Bake, uncovered, in a 325° oven for 45 minutes. Sprinkle with paprika.
