Cheesy Mashed Potatoes

  • 9 medium potatoes
  • 2 c. shredded Cheddar cheese
  • 1/2 c. margarine
  • 1 (8 oz.) carton sour cream
  • 1 Tbsp. chopped green onion
  • 1 tsp. salt and pepper
  • paprika

Directions

    Cook unpeeled potatoes until almost tender.

    Peel and shred potatoes.

    In large bowl, mix potatoes, cheese and margarine until margarine is melted.

    Stir in rest of ingredients except paprika. Bake at 325° for 45 to 50 minutes.

    Sprinkle with paprika.
