  • 1 lb potato
  • 1 leek
  • 3 garlic cloves
  • 12 cup grated cheddar cheese
  • 12 cup grated mozzarella cheese
  • 14 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 23 cup light cream
  • 23 cup milk
  • 12 teaspoon salt
  • 12 teaspoon pepper

    Cook potatoes in boiling water for 10 minutes.

    Cut potatoes into thin slices.

    Arrange a layer of potatoes in the base of an ovenproof dish.

    Layer with leek, garlic, cheeses, and parsley.

    Season to taste.

    Repeat layers 3 times, until all ingredients have been used, finishing with a layer of cheese.

    Mis the cream, milk, salt and pepper together, then pour over potato layers.

    Cook in a preheated oven at 325 degrees for 1-11/4 hours, unles cheese is golden brown and bubbling and potatoes are tender.
