  • 6 large potatoes, peeled, boiled and cubed
  • 2 c. large curd cottage cheese
  • 1 c. sour cream
  • 1 to 2 cloves garlic, put through a press
  • 1 tsp. salt
  • 2 to 3 scallions, finely chopped
  • 1 c. grated Cheddar cheese
  • paprika

Directions

    Boil potatoes until they are just barely tender, not yet soft. Cut them into small cubes and combine them with the cottage cheese, sour cream, garlic, salt and scallions.

    Turn the mixture into a buttered casserole and sprinkle the grated Cheddar cheese over the top.

    Add a little paprika and bake at 350° for about 1/2 hour.

    Serve hot.
