Cheesy Squash Casserole

Ingredients

  • 2 lb. yellow squash
  • 1 lb. zucchini
  • 1/2 c. chopped onion
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • pepper
  • 1 c. water
  • 4 slices bacon, fried and crumbled
  • 3/4 c. Cheddar cheese, grated
  • 1 egg, beaten
  • 3/4 tsp. marjoram

Directions

    Slice squash and place in saucepan with chopped onion.

    Add sugar, salt, pepper and water.

    Bring to a boil and cook until tender.

    Drain and mash.

    Combine bacon, cheese, egg and marjoram; add to mashed squash.

    Put into a 2-quart casserole.

    Sprinkle cheese over top.
