Cheesy Squash Custard

Ingredients

  • 2 Tbsp. oil
  • 2 Tbsp. butter
  • 4 c. sliced squash
  • 1 c. chopped onions
  • 1 garlic clove, minced
  • 2 eggs, beaten
  • 1 1/2 c. grated Swiss cheese
  • 1/2 c. grated Parmesan cheese
  • 1 tsp. dill weed
  • salt and pepper to taste

Directions

    Heat oil and butter in large skillet.

    Add squash, onions and garlic; saute until vegetables are crisp-tender.

    Combine beaten eggs, cheese, dill, salt and pepper.

    Transfer vegetables to buttered 8-inch skillet baking dish.

    Pour egg mixture over. Bake at 350° for 25 to 30 minutes, or until set.
