Cheesy Squash Custard

- 2 Tbsp. oil
- 2 Tbsp. butter
- 4 c. sliced squash
- 1 c. chopped onions
- 1 garlic clove, minced
- 2 eggs, beaten
- 1 1/2 c. grated Swiss cheese
- 1/2 c. grated Parmesan cheese
- 1 tsp. dill weed
- salt and pepper to taste
Directions

1Heat oil and butter in large skillet.

2Add squash, onions and garlic; saute until vegetables are crisp-tender.

3Combine beaten eggs, cheese, dill, salt and pepper.

4Transfer vegetables to buttered 8-inch skillet baking dish.

5Pour egg mixture over. Bake at 350° for 25 to 30 minutes, or until set.

6Makes 6 to 8 servings.
